Fishtown SayJawn Saison
Brewed with the help of our friends at Highway Manor Brewing Company; their tanks, our brewer; oak-barrel conditioned; earthy and dry with notes of tart funk, uber-ripe peaches, green herbal grass, and flower petals.
THE PEPPER IN THE RYE
Brewed with a psychosis-inducing amount of rye and local buckwheat from Deer Creek malting company. Fermented with our house mixed Saison culture and conditioned at cellar temperatures for 5 weeks with dried orange blossoms and black peppercorns
Our amped-up take on a classic farmhouse style ale, this summer delight drinks like a dry wine, with an ABV to match. Brewed primarily with German Pilsner and Munich Malts, the malt forward character is tempered by two weeks of conditioning atop local PA wildflowers including chamomile and violets.

This dark and delightfully hoppy beer was made with a variety of specialty malt, oats and lactose, hopped intensely with Motueka and Citra, and then dry hopped with a heaping helping of cryogenically frozen Citra hops. It might be dark but it’s not bitter or roasty, instead showcasing layered hop complexity and a certain ‘juiciness’ courtesy of those cryo-hops.
What starts as a simple golden Belgian with a base of German Malt and Wheat is radically transformed into an ultra-violet, ultra sessionable ale with the addition of LUDACRIS helpings of organic blueberry purée. Perfect for consumption on hot days!
A small and delicate Pale Ale brewed to welcome the birth of our own Chef Pat’s daughter, Roza, this beer showcases both the spice character that comes from an over 20% use of flaked rye and the bright citrusy notes from an all Lemondrop dry-hopping. The crisp and beautifully sessionable nature of this beer lends itself to summer perfectly.
A double IPA exploding with classic American hop character, this beer is named after the four hops it was brewed with: Chinook, Cascade, Citra, and Centennial. Showing equal amounts of pine and citrus, this beer finishes light and clean thanks to its relatively simple malt bill.
Double Dry Hopped Full Nelson
Our great Single Hop IPA, conditioned on citrus leaves. We brewed this mid strength IPA to showcase the glory of the Nelson Sauvin hop. Aromas of white grape must dominate, with light citrus and grapefruit in the finish.
